Rocket Cellini Classic HX Heat Exchanger E61 Espresso machine

The Rocket Classic features the very best from Rocket Espresso Company traditional production line.
It includes E61 group head, low water reservoir indication warning, boiler manometer gauge and system layout similar to Rocket Heat exchanger Espresso Machines. The Cellini Classic comes in brushed stainless steel finish to match most kitchen appliances.

Coffee Preparation:

Simple to use, just push the lever all the way up and the brewing process will start, to stop the coffee flow push the lever back all the way down.
Cellini comes with the legendary E61 Grouphead - a professional heavy duty brewing group made of 9 Lbs solid molded marine grade brass that is then nickel plated. The E-61 is unique, it is always hot and ready for brewing. A Thermosyphonic circulation system inside the brew group circle hot water through the grouphead all the time. However, The Classic has longer and larger diameter copper pipes between the boiler and the grouphead and therefore it is recommended to flash about 50-60ml of water (blank shot) or 10-12 seconds to stabilize the pressure in the grouphead prior to extracting an actual espresso shot. This process will relief pressure and recommended to gain more temperature stabilization at the grouphead.
Pressurestat - Home machines commercial grade adjustable Pressure Stat is included. Pressure should be set at 1 bar at gauge on standby for optimal brewing and steaming. However, it can be increased to as much as 1.2 bars for slightly higher steam pressure. The downside of higher setting is that you may need to flush even more water before each espresso shot and if its too high, it may also affect the temperature of the water existing the grouphead causing burnt flavoured coffee. Since pressurestats in its nature does not give an indication of actual water temperature, to test the actual water temperature, an external thermometer is required (PID temperature control can be used instead but more commonly in double boiler espresso machines where its performing best).
HX - Heat exchanger boiler allow you to brew and steam milk at the same time. The1.8L boiler in the Classic is made of copper, brass plates and is nickel plated. The nickel plating does not add thermal stability but help prevent copper oxidation. Once the boiler reach the right pressure, you can make espresso and cappuccino same time.
Pre Infusion is an E61 grouphead feature -  common feature to all E61 group head espresso machines with manual lever. It is a quick step just before the brewing process starts and engaged when lifting the lever to a middle point for couple seconds prior to engaging the pump at its upper position. Doing so, the ground coffee in the portafilter handle is first moisturized leading to uniform extraction and prefect flow all around the ground coffee. The result in maximum extraction and a nice flat used coffee cookie. If the machine left  on standby longer than 15-20 minutes, it recommended to run blind shot first (flashing).
Standard round boiler pressure gauge is located on the front of the espresso machine, let you know when the machine is ready to brew coffee.
Vacuum breaker valve protects the boiler from backing milk into the boiler after steaming. The expansion valve releases pressure from the boiler when necessary.
Manual Relief Valve - In the Rocket Classic espresso machine there is only one main on/off power switch and a lever. When you first turn the espresso machine on, the green light will be turned on and the boiler will start to heat. After few minutes, the pressure gauge will show between 0.8-1.2 bars and the machine is ready to go. From this moment on, the lever is the only thing you need to work with to make coffee. When you pull the lever up you turn the pump on and water will come out from the grouphead. When you push the lever all the way down you stop brewing and it opens the manual pressure relief valve. The pressure relief valve release excess water from the portafilter holder to the tray and by that dries the ground used coffee in the portafilter handle so its packed nicely into a cookie shape, easier to knock it out.
The Cellini Classic has electronic water sensor located just under the water tank. This sensor has important role. It shuts off the heating element when the machine runs out of water in the water tank. Failure of tank water level sensor or inaccuracy may lead to over heating without water and can cause total damage to the boiler. Some other similar espresso machines will turn the whole machine off. The Rocket Classic sensor also sense the water level in the tank, advising you by flashing the light that its time to refill.
** Please note that scale and sediment free water are required for use with the Classic Espresso Machine. You can not use in tank water filter softener like any other machine because there are no hoses in the water tank. If you use filtered water where the positive / negative ions removed such as many reverse osmosis systems, the electronic water level sensor inside the boiler can easily fail to perform. If you use non filtered, tap or mineral water the sensor inside the water tank (reservoir) may fail due to scale or sediment build up. Therefore if you prefer to use reverse osmosis water, it is recommended to add 10-15% of mineral filtered water to each tank so the electronic sensor could perform.
Two commercial portafilter handles included, one with single filter basket and single spout for one shot espresso and the other with double filter basket and dual spouts for two cups. Both portafilter handles are commercial size 58 mm diameter made of chrome-plated brass  for best temperature stability.
 
Steaming Performance:

Classic has good  steam power due to its HX 1.8 liters boiler horizontally positioned. The Classic  is always ready for you to steam and froth milk at any given time. The machine has quick boiler recovery time due to its 1200 watts heating element so steam power is fairly consistent.
Separate Stainless steel wand for hot water and for steaming/ frothing milk.
Swivel base Anti burn wands for hot water and for steaming/ frothing milk. The new generation wands with double insulation layers let you touch the wand with bare hands without burning.

Special & Convenience:

 The top of Classic espresso machine is a good cup warmer for keeping your cups warm. It has dual stainless steel layers with specially designed venting holes that let hot air rising up from the boiler to heat the cups but not letting any water from the cups coming down into the machine. Since there is no thermal insulation to the boiler, the top tray can get relatively hot.
 Large water tank contains up to 2.9 Liters of water, more than enough to make over 25 espresso shots. It has 2 handles for easy lift for refill.
 Body: The chassis and front of the Rocket Classic is made of black metal. The outside panels are made of polished stainless steel.
